This firm, Grana-style aged goat cheese comes to us from Barbara Brooks at Seal Cove Farm in Maine. Barbara's incredibly happy goats produce high-quality milk, and the flavors of that milk intensify and blossom as Chevrotin ages. The result is an herbal, intense, delicious crumbly cheese. Use Chevrotin as a grating cheese or serve on its own drizzled with balsamic vinegar or honey.
