"Chällerhocker" translates loosely to "sitting in the cellar." Our friend, the humble master craftsman Walter Rass, makes this beautiful cellar-aged cheese with milk sourced from neighboring St. Gallen farms. Chällerhocker's flavors range from sweet cream to onion and garlic to toasted hazelnuts and bacon. It's a beautiful melter, but is equally at home on a snack plate with a drizzle of honey and a glass of dry cider.
