This limited edition aged Gouda - also known as "Black Betty" - is available only from November through January, and we wait with great anticipation every year. Affineur Betty Koster sets aside a small amount of Brabander every year and ages it twice as long as usual, creating a firm, crystalline cheese that explodes with flavors of caramel, pineapple, and brown butter.
