Cowles is an ash-ripened goat cheese with a delicate rind and a flavor that develops from citrusy to just a bit earthy as it matures. The texture is dense and slightly chalky in the center with smooth silkiness just under the rind. Another beautiful little cheese from maker Rebecca Velazquez, who bestows upon her cheeses the surnames of her female ancestors that might otherwise be lost to history.
Beverage pairings: sparkling wines, dry white wines, crisp dry ciders, light-bodied red wines
